Secret Sip Coffee Club was enamoured with the incredible product showcased by the incredibly talented Van & Co. based out of Toronto, Ontario. This fabulous roasting team brought our membership a truly unique twist on the typical Single origin taste profile of Guatemala. The small team pushed out big scale flavour profile with a minimalist yet impactful brand. As this small artisan roastery asserts “We find solace in the simple things done with care.
We fell in love with the intimate attention to detail this team takes in every exchange “We want to encourage you to take time to slow down. Sip and savour. Smell the aroma. Feel the comfort of a warm cup of coffee. Enjoy the small pleasures.” There focus on organic, fair-trade products, and farm to cup is truly inspiring.
Our team went with Van & Co’s awesome Guatemalan single origin from the Huehuetenango region that was produced by an all women producer collective (Asprocdegua), which aggregates local smallholder farmers. The varietals of bourbon, caturra, catuai, pache, were washed and were grown between 1600 and 2200 MASL. The luscious notes of Cocoa, toffee, and stone fruit flowed through every viscous pour.
The team included a detailed description which we saw fit to include herein: “Certified-organic, this coffee is grown in the western highlands of Guatemala, Huehuetenango (pronounced “way-way-ten-an-go”). ASPROCDEGUA (Asociación de Productores de Café Diferenciados y Especiales de Guatemala) oversees the production, representing 664 smallholder farmers in the area. Many of the farmers plant other crops for diversification, including bananas, lemons, avocado and guava. A truly balanced coffee that showcases bittersweet cocoa upfront, followed by a bright fruit note.”
