September 2019's Roaster of the Month: Prototype Coffee
Secret Sip Coffee Club is pleased to present September’s roasting partner, the proprietor of which perfected his craft over the past decade learning the basics in a small roastery in Los Alamos, New Mexico where he grew up. Now proudly roasting out of Vancouver, BC, Prototype Coffee produces some incredibly dialed in products with undoubtedly some of the most incredibly detailed and beautiful packaging / branding we have seen.
Prototype is a true microroastery. The owner, Matt, literally roasts on an Aillio Bullet R1, which holds up to 1 kg, translating into up to three bags per roast. Matt chose this approach to roasting because he wanted to be able to offer a large selection of top quality, high scoring, and exciting coffees without compromising roast quality or freshness. Roasting to order in small batches is a bit more labour intensive but it gives Prototype more precise control over the profile of each roast while also reducing waste and keeping his coffees tasting as fresh as possible.
Over the last few years, the Vancouver coffee scene has helped Matt sharpen his palate and learn what coffee tastes like at its best. Matt worked at the famed Revolver in Vancouver for three years as a manager and a barista, where he had the opportunity to taste coffees every day from some of the best roasters in the world.
This month’s offering was a RARE specialty small batch from La Capilla, Peru. This fully washed selection of Caturra, Bourbon, Typica, Pache, and Catimor cultivars was grown in the district of Santo Domingo de la Capilla in the province of Cutervo in the Cajamarca region Peru by a small group of local smallholder producers at 5050 – 6250 feet. The luscious tasting notes include fudge, amaretto, raspberry, and red apple with a vibrant juiciness and a decadent finish.
