November 2020: Colosimo Coffee Roasters
Secret Sip Coffee Club proudly unveils a Rockstar of a roaster who charmed our Canada wide membership with a succulent yet savory single origin. With the cornerstone of our rivered roasting partner being “Truly Great Coffee”, we were graced with a gem produced by this Winnipeg, Manitoba locally owned and operated roastery, established in 1997. Boasting a 3-time consumer choice award winner, the team and founder at Colosimo Coffee Roasters feel that every cup should be “exciting”.
“Our passion for responsibly sourced coffees offer more than just the highest quality beans, it allows us to ensure that the future generations are able to keep enjoying this fabulous drink.” Colosimo Coffee Roasters is also obsessed with Direct Trade and ensuring a more equitable and sustainable exchange throughout the relationships they establish when sourcing and partnering with farmers across the globe:
“We choose to work directly with our coffee growers for a few reasons:
1. Direct trade allows us to work with the farmers at origin to produce flavor profiles which are unique and stand out from what is available through the open market.
2. We are able to work directly with farmers who are as passionate about growing coffee, and who want to produce the best coffee they can. We agree to pay a premium for this level of quality and service.
Colosimo Coffee Roasters Direct Trade partners receive approximately 25% more for their coffee than what FAIRTRADE would pay them.”
November’s secret roast was an exceptionally documented Colombian direct trade, single origin coffee eliciting a smooth creamy Chocolate, Hazelnut & Vanilla tasting spectrum originating from the Cooperativa del Caficultores de Norte de Caldas, which was created on June 2, 1963 in order to solve the problem of coffee commercialization in Northern Caldas. In the municipality of Salamina, farmers banded together to process, organize and market their coffee. After Salamina was founded, other branches were opened, Pacora, Castilla and San Bartolome (1966 ), Filadelfia and Aranzazu (1967), La Merced (1968) and Samaria (1979). At this time, there are 2297 associates. It is recognized in the north of Caldas as one of the best co-ops and is lauded for the level of democratic co-operation between its members.
