August's Secret Roaster: Brulerie Faro

A lineage rooted in coffee roasting is what attracted us to Faro. After having several interviews with the 3rd generation owners, Maxime and David, we decided their story was worth sharing.

Faro is a unique roaster from Sherbrook, Quebec and was established in 1982 by the current owner's grandfather, an immigrant from Italy. Now it is the two grandsons who have carried on the tradition, and in our opinion have taken it to the next level. David and Maxime fly to select plantations around the world every year to select their beans for their unique roasts. It is for this reason alone, we wanted to feature Brulerie Faro as our first secret roaster.

The roast we selected for the month of July was a decadent medium espresso roast with a 75 : 25 Arabica : Kapi Royal split which fused Ethiopian, Costa Rican and Tanzanian beans yielding a cream centre with a dark chocolate and nutt finish with caramel aromatics.

The team at Faro is so passionate about quality and their craft, and pride themselves on making their product standout. In an interview, David, head roaster and co-owner explained that in order to maximize freshness and lock in flavour, Faro uses a special roasting technique for all of their exclusive coffees. They use small-batch ovens for every roast to ensure control over quality and all of their green coffee beans are always stored a temperature-controlled environment at their main roasting facility. These techniques, Maxime indicated, have evolved over the 30 plus years of roasting.
