2018 - February's Secret Roaster: Brûlerie Rousseau
Secret Sip Coffee Club is beyond pumped to announce our newest roasting partner roasting out of historic Quebec City, Brûlerie Rousseau. This roaster’s history is beyond a doubt one of the oldest we have uncovered across Canada to date. Established in 1867, this 150-year-old company is a force to be reckoned with!
Interestingly enough, this company began in elusively in the tea industry, obtaining shipments that with origins from Japan and China, and arriving by seafaring vessels primarily from England. It wasn’t until 1889 that coffee made its appearance on the scene, the origins of which ranged mostly from Colombia and Brazil. Then in 1938, the magic happened. The Company began roasting coffee. The company remained under family ownership until the 1980’s and then underwent several separate acquisitions eventually ending with the current owners in the mid 2000’s who have invested more than $ 1.5 million into the company to take it to the next level.
The current owners deeply rooted belief in the highest quality coffees is exemplified by their sourcing practices. For all of the sourced micro-lots, Rousseau sends its employees to visit farmers and taste the different coffees at the source. Efforts to constantly explore new territories and farms to curate the magical list of meticulously selected lots is what made Rousseau stand out to our team… in addition to their amazing coffee, of course.
This month’s secret roast is an outstanding single origin from the Huehuetenango region of Guatemalan. Coffee beans from this region typically exhibit subtle and mild yet complex tasting notes aligned with a slightly buttery palate and sweet floral aroma. This month’s secret roast has a balanced honey-chocolate note with a creamy nut finish.
