December 2019's Roaster of the Month: Java Roasters

Secret Sip Coffee Club took it to the next level to close out 2019 with an absolutely incredible team and product being showcased for December’s Secret. We had the absolute pleasure of welcoming a dynamic, all girl powered duo, with the most refined palettes and brilliant creative directive to be our roasting partner, killing it in Toronto, Ontario.

 Java Roasters is an absolute must for anyone looking for a top tier artisian coffee roastery in the heart of Leslieville. Their philosophy is based on holistic respect for people, coffee and the earth and their obsession is undoubtedly quality coffee. All of their frequently rotated micro lot coffees are always fresh in season and they truly do an amazing job of bringing the farmers and producers behind the beans to the foreground. Amongst other things, they are passionate about the environment and proponents of the "RE" like: REduce, REuse, REcycle.

This month’s offering was a wild adventure for our palettes. Java Roasters presented an incredible EL SALVADOR Maritza with unbelievable tasting notes of Walnuts – Banana Bread – and Milk Chocolate! The location of the farm is the Bálsamo Quaezaltepec Mountain Range / San Salvador and is produced by Maritza Boza (a coop with Karla Boza). The varietal is Bourbon processed with mechanical washing and grown at an elevation of 1200 MASL.

 This coffee is very special because of the farmer. Karla Boza is a young girl who took the farm after her father. This is her VERY FIRST harvest. No one believed in her, and her father said there is no money in Specialty coffee. Plus “she is a GIRL” - sounds terrible, don’t you think? But Karla said “watch me”! I will do Specialty and I will sell this coffee. And she did. Karla’s innovative labour and operational policies really take into account the social and environmental factors. She is truly an innovator and

one of the recipients of the 2019-2021 Leadership Equity and Diversity (LEAD) Scholarship Program. LEAD is aimed at increasing diversity of leadership within the global coffee community by enabling access to professional development resources to people from underrepresented or marginalized communities.
