March 2018's Roaster of the Month: St. Paul

Secret Sip Coffee Club is so pleased to present our March roasting partner roasting out of Thunder Bay, Ontario – St Paul Roastery. What began as a project of passion from home a mere six years ago has transformed into a liquid-gold watering hole in the heart of downtown Thunder Bay for many of the city’s residents.

The passionate owners have a lovely grass-roots story:

“After family and friends started to enjoy what we were doing we bought home roasters, then decided to take the idea commercial.  We looked around downtown Port Arthur in Thunder Bay's North Side and found a space; we spent a little over a year renovating the place using a fair amount of repurposed wood from my friend's garage he took down. We roast on site, and I believe we are still the only cafe and roastery operating in the same space in town. The work we've been doing has been very well received and without having done any advertising since our opening nearly three years ago we are becoming quite well known in town as a place to get quality coffee.”

This month’s secret roast was a beautiful lightly roasted Colombian from the Narino region swinging heavy flavours of chocolate that are cut beautifully with a pleasant tangy acid green apple finish.
